book, the 1982 facsimile being long unavailable. It is the first of a short
series of writings about food and gardening by John Evelyn. The most important
is an edition by Christopher Driver of John Evelyn's own recipe book, never
before made public. Christopher Driver, a former editor of The Good

Table. The text of Acetaria has been reset to make it more readable
to modern eyes, and is furnished with an introduction by Tom Jaine, a full
