This is a paperback edition of our long-standing hardback
first published by Alan Davidson in 1983 and then reinforced with new introductions
by Jennifer Stead and Priscilla Bain and myself in 1995. We have finally
sold out of the hardback and thought it essential to keep the title in
print, given its status as the most important, or certainly the most printed,
recipe book of the eighteenth century. The large format of the original
has been preserved and there has been neither addition nor subtraction
made for the paperback edition. The introduction encapsulates much of the
pioneer work done by the late Dr. Alastair Robb-Smith on the life of Hannah
Glasse (buttressed by a further visit to the Northumberland record office
to inspect the original manuscript letters of Glasse herself). And the
important bibliographic essays and Glasse’s borrowings by both Jennifer
Stead and Priscilla Bain also secure this edition the status of necessary
research tool.
